The Cafeteria operates five days a week Monday – Friday from 6:00am-2:30pm. No WEEKENDS!!

The Sous Chef is fully accountable to manage the day-to-day operations of the corporate cafeteria and catering department, including the oversight of the cafeteria hourly TEAM members. Candidates should have experience working in a production kitchen and managing team members towards successful meal occasions.
This role is responsible for guest satisfaction, and for the oversight and production of safe to eat, attractive, and delicious breakfast and lunch items on a rotating cycle menu, that includes daily specials and cross utilization of product. This role includes menu creation and recipe testing, development, and training, which can be accomplished independent of the Chef.
Adhere to personally and hold hourly TEAM members accountable to Tyson safety policies, as well as safe food handling procedures, as outlined by the Arkansas department of Health. The Sous Chef plays a role in the management of inventory and ordering of food products and other supplies.
Candidate should present themselves with a strong understanding of kitchen terminology and culinary techniques. Should be able to demonstrate an understanding of roasting, steaming, braising, sautéing , grilling, frying. Should be able to identify a wide variety of foods and ingredients and be able to assess quality of foods and spoilage concerns.
Candidate should be able to demonstrate culinary skill through an on-site culinary presentation.
Other responsibilities include: Oversee cafeteria hourly TEAM members, establish daily roles and responsibilities, and achieve successful meal occasions each day. The Sous Chef plays a hands-on role in food production each day. The role could be described as approximately 85% kitchen, 15% office.
Assist in the training and mentoring of each cafeteria TEAM member. Assist in the development of their culinary and customer service skills. Ensure safe food handling procedures are being implemented. Make certain that TEAM members are preparing, cooking, and holding foods properly and be proactive in addressing incorrect actions and behaviors.
Research food trends and recipes, become familiar with the Tyson Foods catalog of products and be an expert on our specific operation to create, test, and implement standardized recipes and menus for the corporate café. Assist in managing daily sales, bank transactions, record keeping. Help track daily sales and headcount to forecast future business needs.
Help manage cafeteria TEAM with regards to attendance and scheduling, payroll, productivity, policy adherence, and HR related situations.

REQUIREMENTS:
EDUCATION: Requires knowledge of high school subject matter such as mathematics, grammar, and business practices. Knowledge is normally acquired by four years of high school. Culinary Arts Vocational Certificate, Culinary Arts or Foodservice Management Degree from a College or University strongly preferred.
EXPERIENCE: Minimum 3 years of experience as a Sous Chef, Executive Chef or Kitchen Manager in a production kitchen. High volume food production preferred.
COMPUTER SKILLS: Outlook email communications. Excel basic create very basic spreadsheets. Word processor.
SPECIAL SKILLS: Basic math skills needed for financial transactions, recipe conversions, and other kitchen matters. Customer service skills are present on the job as we are representing ourselves to guests. Culinary terminology and technical skills used daily. Food preparation and cooking techniques, knife handling, and other standard kitchen equipment.
SUPERVISORY: This position is responsible for supervising a group of personnel who perform somewhat identical and related task or activities.
