****Job Description:
The Banquet Captain is charged with the daily oversight and leadership of all food and beverage Banquet operations in coordination or absences of the F&B Director. He or she will work closely with all FOH and BOH associates through communication, support and training.
In this position the Banquet Captain will provide hands-on leadership to facilitate Banquet dining experiences that exceed guest expectations. He/She will make sure that standards for quality, service, timeliness, safety, security, sanitation and regulatory compliance are adhered to.
The Banquet Captain will plan and prepare for all Banquet events so that they meet the highest level of expectation by hands-on management and oversight and will direct and support post-event activities.
Responsibilities Include:
Conducts pre-shift meetings with staff including menu and service standards training, membership changes or additions, and Club related policies and procedures.
Receives and resolves complaints concerning food, beverage and service and reports such complaints according to Club procedures.
Assists with the set up and execution of private parties and Club events.
Ensures that all food and beverage staff are presentable, well-groomed and in established uniforms at all times.
Determines workload requirements from catering orders.
Meets with function group leaders and event planner to discuss setup arrangements; addresses last-minute changes and resolves problems.
Interacts with customers and resolves complaints in a service-oriented manner.
Demonstrates complete understanding of Banquet menu items and ensures banquet staff is knowledgeable of menu items served.
Instructs staff on work expectations for catered functions.
Helps staff set up rooms to desired specifications.
Sets up AV equipment for events and breaks down equipment upon completion, making sure that it is stored properly.
Assembles and delivers food and supplies to scheduled locations.
Serves food and beverages to guests.
Returns food, beverages, serving equipment and utensils to catering facility.
Ensures proper presentation, portion control and maintenance of serving temperatures; follows HACCP standards.
Maintains sanitation and orderliness of all equipment, supplies and utensils.
Ensures proper food preparation by following approved recipes and production standards.
Performs other duties as assigned.
Requirements:
Knowledge and Skills Needed:
A minimum of 2 year's supervisory experience in the Food & Beverage service industry.
Strong working knowledge of food safety, sanitation, and general workplace safety standards with general knowledge of Health Department requirements.
Knowledge of A/V equipment.
Excellent communication skills
Self-starter who can work independently as well as within a team environment.
Fluent in Microsoft Office and POS programs
Friendly and welcoming customer service
Flexibility, ability to work extended or irregular hours to include nights, weekends and holidays. Temperature extremes, excessive noise. Must be able to lift up to 50 lbs. in weight.
