An Assistant Chief Steward oversees and directs all aspects of stewarding operations under the general guidance and supervision of the Chief Steward, following Hilton policies and procedures. This role ensures that quality standards of cleanliness, hygiene and sanitation of all kitchen areas, equipment and utensils are maintained at all times, leading to guest satisfaction, employee satisfaction and profit for the hotel.

What will I be doing?

As Conrad Centennial Singapore Assistant Chief Steward, you will utilise your exceptional organisation skills to coordinate all kitchen stewarding floor operations. This includes the proper maintenance of all operating equipment, compliance with food hygiene and safety standards, and compliance with environmentally-friendly initiatives. Specifically, the Assistant Chief Steward will perform the following tasks to the highest standards:


To provide training, support, motivation and direction to the Stewarding team
Ensure that department staffing, equipment, and supplies are at level that meets demand
Manage all stewarding operations to include, but not limited to, inventory management, maintenance of sanitation and cleanliness standards, systems management, budget and forecasting, health inspections, safety initiatives, report generation, department management, meeting participation and facilitation, implementation of policies and procedures, cost controls and overall profitability
To closely monitor the performance of Stewarding Supervisors and Stewards ensuring optimum productivity is being practiced, and that training needs and excellent job performance are identified.
To successfully plan and implement operating equipment stock take
To ensure the dishwashers and other operating equipment is maintained and the sanitation and state of cleanliness is to standard
Ensure the flow and supply of operating equipment’s meets bar, banqueting and restaurant requirements
Ensure the Stewarding Team has full knowledge and understanding of compliance regulations as they effect sanitation and hygiene
Identify and develop new revenue opportunities
Work and coordinate with the banqueting functions to ensure the accurate and timely preparation of individual plates/orders
Carry out any other reasonable task set by the HotelManagement

Previous experience working within a similar role, preferably within the hospitality industry
Demonstrated experience in a fast paced, high volume environment
Strong managerial and communication skills
Confident communication skills and positive manner
Excellent planning, organising and time management skills
Ability to lead and work within a large team
Computer literate
The flexibility and availability to work various hours as per business needs
